3,4 kg of blackcurrant ➡️ 2,5 kg juice ➡️ 12 small jars of blackcurrant puree ➕ 3 l of blackcurrant sirup
Blackcurrant puree is only blackcurrant and sugar mixed cold, so all vitamins stay in puree 👍 The puree is great with yoghurt or milk with oatmeals or with sauce of vegetable „svíčková“, instead of cranberry.
Sirup is not cooked too, only warm water.
Recept for puree:
100 g of blackcurrant
100 g of sugar
🟣 Mixed together, you can use whole berries, but it has to mix.
🟣 Stir until sugar is dissolved.
🟣 Blackcurrant has much of pectin, puree solidifies on its own.
🟣 Fill into jars, do not cook.
Recept for sirup :
3 l of blackcurrant
2 l of warm water
20-50 g of citric acid
2,5 kg of sugar
🟣 Blackcurrant crease (I used the juice) and mix with water and acid.
🟣 Let it stay for 24 hours.
🟣 Strain through the canvas.
🟣 Mix with sugar and fill into jars.
